Spicy Garlic Prawns and Broccoli Purée

This simply Prawn and Broccoli purée is packed full of flavour. The Prawns are a great source of zinc, protein, iron, Vitamins B6 and B12 whilst the broccoli gives you heaps of Vitamins A and C



Serves 2 


For the Broccoli Purée:
325g – Broccoli, cut into florets
1 tbsp - olive oil
3 cloves garlic – finely sliced
1 litre of chicken stock
Salt & pepper

For the Prawns:
1 tbsp – Sesame oil
250g - raw peeled tiger prawns
4 garlic gloves - finely chopped
3 spring onions – thinly sliced
1 red chilli – thinly chopped 



Prepare the Broccoli mash:

Step 1: Cut the Broccoli into small pieces. Peel and thinly slice the garlic. Heat the olive oil and add the broccoli and garlic. Sauté for a 2-3 minutes so that the garlic softens. 

Step 2: Pour in the chicken stock, bring it to the boil and then simmer until the Broccoli becomes soft. 

Step 3: Once drained, place the soften Broccoli and garlic into a food blender and whizz until blended. No blender; just use a potato masher. This would be a little less smooth but would give you a bit more texture. Add some salt and pepper to taste. 

Prepare the Prawns:

Step 4: Heat the sesame oil in a work or deep-frying pan. Put in the garlic, spring onions and chilli; cook for about 1 minute on a medium heat. Toss in the prawns, stirring everything until the prawns are cooked through 

To serve: Plate up the Broccoli mask and pile on the prawns. Add some lemon slices and sprinkle some sesame seeds over the top of the prawns
