Load up on good fats with this grilled salmon and avocado salsa dish full of omega-3 that only takes 15 minutes cooking time.

This great and easy recipe is part of our series on all Fats - the Good Fats; Bad Fats - with a look at the ones we need to keep our bodies fuelled and other enjoyable recipes.

2 x 125g salmon fillets

Salmon Rub
½ tsp - chili powder
½ tsp - cumin seeds
½ tsp – paprika powder
½ tsp - black pepper
½ tsp – salt

Avocado Salsa
1 Avocado, peeled, stoned and cut into cubes
75 grams - halved cherry tomatoes
½ - medium size red onion, cut into small pieces
2 tbsp – olive oil
lime juice
chopped fresh coriander

1.Mix all the Salmon rub ingredients together and rub the blend into the salmon fillets.

2. Put in the fridge for 30 minutes allowing the rub to soak in to the salmon.

3. Mix together all the Avocado salsa ingredients ans set aside. You can keep it “chunky” or mash it down depending on whether you’d like some texture or a creamy topping.

4. Grill the salmon for about 4 minutes each side. You want the salmon firm but not dry.

5. Place the salmon on a dish and spoon the Avocado salsa over the top of each fillet.

Serve with a green salad and chunky, crispy bread

Some salsa leftover? Keep it in the fridge and either have it with flat breads or as a side dish throughout the week.
